The difference between a single and a double baffle is simple, its a baffle on top of another baffle. A double baffle is when you put a single polystyreen baffle that is extra long behind a cardboard baffle.
The long polystyreen baffle will direct air-flow up through the soffit, and the cardboard baffle will block any insulation from going into the soffit. This is a great system because you are guaranteed to always have really good air flow into the attic and never get any insulation into the soffit.
